I froze some surplus eggs and defrosted/scrambled them a few months later.

Still edible, but the texture wasn’t quite right.

I pickle all my surplus eggs. 1 gallon jar. 1 can of red beets. 1 tablespoon of picking spice. 1 cinnamon stick. 2 cups if cider vinegar. 2 cups water.

Pack the jar with peeled hard boiled eggs and beets. Pour in the stove heated liquid including the beet juice.

Keeps for a year in a cool place. They are excellent this way. Very purple.

And I forgot, 1/2 cup sugar dissolved in the liquid on the stove.
