There’s no such thing as essential carbohydrates, while there are essential proteins and fatty acids.

Now, it’s true that you do need certain nutrients that can only come from foods with carbohydrates in them, green leafy vegetables, like Brussels Sprouts and Cauliflower.

I am with BobL on this subject.

Stop for a minute and think back to hunter/gatherer times, and seasonality of eating patterns, different climates, different food sources. These people didn’t have cauliflower or brussels sprouts year-round, or fruits and grains.

They did eat “nose to tail”, and managed to get most nutrients from the animals they hunted. So much of what we have been taught is theory and marketing, unsupported by clinical evidence

What carbs are in the traditional Inuit diet outside of any wild berries, which are of limited availability? Some sources reference 15 to 20 percent of their diet as carbohydrate intake, but do indicate this is from glycogen content of the meat consumed. Half of their calories come from fat, with 30 to 35 percent from protein. They are not vitamin or mineral deprived.

The French trappers of the northern regions were familiar with Mal de Cariboo, which is fat starvation in the face of eating abundant lean meat. Protein poisoning from excess lean meat results in excess urea and eventually shuts down the kidneys.
