Theres not the ARTISTS and workmen to replace it!
I've seen a documentary on the building of the National Cathedral in Washington and they had craftsmen and artist working in stone that replicated the artwork seen in the old cathedrals in Europe but you're right. It would take whole schools of artisans many years, if not generations to learn to master the skills these middle ages passed on.
Probably use computers and robotics to recreate what humans did centuries ago.
Still, something precious is lost.

The National Cathedral is Protestant,,,not Catholic with statues and beautiful art.

True. Notre Dame and everything in it are surely documented to the nth degree. A very meticulous restoration would produce a quite faithful copy. If there were the will do do it. The loss of historical objects is tragic, but the design and decoration can be recreated.
