I suspect his hosts were treating him to what they considered delicacies, not quite comprehending that national culinary preferences don’t necessarily travel well. Ears are a nugatory part of the hog and probably far more expensive than the meat itself. The first time I set foot in China, on a budget tour, I was treated, to a dish of fish heads. I thought the fish heads were a decorative garnish for some entree they had somehow forgotten to place on the dish. I was trying to figure out what to do with it, when I was informed that this was a delicacy more expensive by weight than the rest of the fish and the edible parts were the tongue and the cheeks. It was well-flavored, but substantial it wasn’t.
