I am not a huge fan of Lamb, but if cooked right it is great.

I AM a huge fan of lamb, properly cooked. Lamb is the Red Meat that is best for you and can be digested by people who can not eat other meats. Lamb fat is the worst for you so be sure to eliminate it while carving.
Lamb fat is lousy, unfortunately. In England, they have recipes to make it into gravy but I can’t imagine that. Too greasy. Maybe too gamey as well although I love lamb and buy Australian lamb chops at least once a week.
A friend of mine raises sheep. He says if you cook lamb right, you can ALMOST get it to taste like beef. But his freezer is full of cow-meat.
