Corn ground to make corn meal for cornbread and so forth is not treated. I don't know where you folks are getting the idea that corn must be treated before eating. I've eaten untreated corn all my 74 years of life.

I've eaten untreated corn all my 74 years of life. No one is saying that untreated corn is poisonous, or entirely without nutritional value.
It's just that certain very important nutrients in corn cannot be utilized by the human body unless the corn is treated with lime.

It won't hurt you, but if you look up some facts about maize you'll find that you can't live on it as a staple (as you can with potatoes) because most of the nutrition contained just passes through. No one's saying it's unhealthy. But the Aztecs and other tribes could live on mostly tortillas and masa.
I was also brought up on (Kentucky style - meal, butter milk, baking soda, and salt baked in a greased cast iron skillet) corn bread. But we also had butter, fried chicken, fried ham and red eye gravy, greens, and potatoes to "round out" the nutrition.
