I now sub at a school where I taught for many years. The school lunches used to be pretty good, but with the advent of Michelle Obama’s recipes, things went downhill pretty fast. The cooks used to make the best rolls, but then they had to change to wheat flour. Wheat noodles for spaghetti that have the color of dried mud. The wheat flour gives the same mud color to tortillas. And then there’s the saltines to go with soup or chili. No flavor, no crunch, instead of adding they detract from the meal.
To give the cooks credit, they did not cut down on portion size, but I believe they are forbidden to offers seconds if there happens to be food left over. And of course, the amount of food waste has doubled. More winning!
