That there is the best chocolate, IMHO. Callebaut from Belgium. Great for from-scratch recipes like fudge, chocolate mousse, ice cream, chocolate cornstarch pudding, or... just eat it plain (the semi-sweet milk or dark). Comes in 80 pound blocks, but stores may break into more convenient 1-3 pound chunks.
Way back before babies came, I was in the import/export business as a Customs Broker. Callebaut was one of our clients and they used to give THE best Christmas presents to us. Delicious!
