Oh, your poor Mom! We always had to eat leftovers whenever there were any. When we were growing up, Mom would make a big meal on Sundays, often a rump roast with gravy, potatoes, veggies, etc., etc. We’d usually eat it at noon or 1, whenever we got back from Mass and settled, then we’d have hot roast beef sandwiches with potatoes and gravy for dinner - both meals were so good. If there was leftover roast, she’d grind it and add mayo and chopped pickles and we’d use that for sandwiches - loved that and now I’m wishing I had some.
Spaghetti sounds good - I may make some next week. I love any type of pasta, but just good ol’ spaghetti is my fav. When we go to the Kite Festival and ocean in Aug, we try to fix meals that are easy. When it’s my night to cook, I buy the 3 pack of Classico Spaghetti Sauce at Costco, use 2 jars and doctor it up a bit with hamburger and pork, along with some additional herbs and spices and serve it with a tossed salad and garlic bread, sometimes sausage on the side, too.
What I’ve started doing for just me, instead of buying a jar of sauce, I’ve been buying the stewed or diced canned tomatoes with Italian seasonings, then just doctor it up with more garlic, etc. Good for about 3 meals instead of way too many. I like meat and eat it, but I don’t care if I have meat in my spaghetti, so this is more of a marinara. Very easy and inexpensive :-)
Too cute. Don Jr has quite the beard started - guess he decided not to shave whilst on vacay - good on him.
Fun! We sing that at the 7th inning stretch (time to stand up and stretch) at the Seattle Mariner’s games. Instead of “home team” we say Mariners :-)
