Consumers from Wisconsin are crossing the border to Illinois to stock up on a commodity they can't buy in the Dairy State -- Irish butter.

We only use butter, no margarine, but Irish butter is too expensive for me. I tried to make butter a while back, souring the cream with a little yogurt overnight, etc. But I used pasteurized cream, and it just doesn’t work the same. It had almost no flavor, and makes so little, it’s just cheaper to buy butter on sale.

How come there are not American grown companies doing this? Plenty of grass in the USA. Am I missing something here?

Start slow with the Caprylic Acid. MCTs are interesting. There is only three steps via the portal vein and liver to the carnitine shuttle and ketones. Build up the stomach enzymes slowly or you will be running to the bathroom.

My father tells tales where he, as a kid, had to fold color packets into margarine. At the time, it was illegal (Michigan) for margarine to be colored like butter.
Then I was a manager in a margarine factory. Seeing machines bind up because of “polymerized” margarine was enough for me. Never touched the stuff again.

I have read that French butter is different, and that makes the pastry and croissants there taste significantly better.
Not sure if it the cows’ diet or the type of cow that is responsible for the difference.

I use Trader Joe’s cultured butter from Brittany. I like even better than Kerrygold. I’m not sure, though if it’s produced from grass-fed cows. For some reason I thought it was, but there’s nothing on the package stating it is.
