Nice tip for the bus boy - last week at the bank I had to explain to the young female teller what a "C-Note' is. She had never heard the term before.

Grew up on a farm and raised all our meat. Steak wasn’t a big deal and we, often as not, had porterhouse or T-bone and eggs for breakfast - all fried - with steak gravy and homemade biscuits. Everything was fried and well done. Grill steak? Maybe the city folks did, not farm people.

My wife is from Texas. First time we had steak together she ate it well done and with ketchup. I was totally shocked. A Texan, a well done steak, AND ketchup. I have worked on her for many years and now she eats steak rare, actually she eats it more rare than I do. I am kind of a medium rare guy.
She does still do ketchup some times. Also uses it on other meats. So now I call it Texas Barbecue sauce. She hates that.
