Their primary defense would probably be that you have to prove that the paper knowingly published a false story or acted "with reckless disregard of whether it was true or false."

That's called "actual malice." The case that gave the ruling is even named after them: New York Times Co. v. Sullivan 376 U.S. 254 (1964).
