I know several families that do co-ops and it greatly limits their other opportunities to learn and teach what they want rather than what the co-op offers. Plus they are locked into the strict schedule.

Okay. Sounds like the co-ops in your area are not for you nor would have been for our family either. The co-ops I've known in the past were not as stringently operated as you describe and were specifically course-oriented and setup by the parents themselves, not as mostly replacement schools for the less-dedicated parents.
I think I see your disdain for the kinds of set-in-stone co-ops you've encountered. We probably would not have chosen knowingly to use such a co-op either.
