coconut in tomato sauce sounds wonderful! I’m trying to wrap my brain around the two different taste. Tomato and coconut. WOW! Sound delicious. My mom always put in a tsp. of sugar when she used tomato paste.

YOu can get the coconut anywhere. I use Bob’s Red Mill. YOu just reseal or clamp the bag and it lasts forever. I’ve been adding it to baked fish, or shrimp. Salmon is great too.
