I missed confit because they have no idea what confit is

confit is always cooked slowly in its own fat, usually duck, and rillets is a prime example up the confit process

It’s a process of cooking usually meat long and slow totally submerged in fat until almost falling apart. One of the best fats for this is duck fat. It comes out very moist and tender and not nearly as oily as it sounds. They use it a lot on Iron Chef America and other cooking shows doing 5 star dishes. We have Mexican restaurant in Eagle Rock California that makes duck confit tacos.
