learned something I should have already known. One guy with us who was filleting the fish skinned them with a knife instead of just hand pulling the skin off. Hand pulling leaves a lot of white residue that does not taste good and is really hard to get off the fillet.
Also we never touched the fillet with fresh water,only salt. Fresh water washed fillets totally change the flavor, texture and color of the fillet.

P.S. Live directly across from the Golf Course where Obozo is wasting our tax payer dollars. They stopped traffic in two directions on a 2 lane road backing many of us up for a mile on each side, so he could do 3 holes that you cannot see from the road.
