I’m caucasian too. I had pho last night, cooked by my Vietnamese wife. I don’t have a clue how to cook my own.

I’ve made it a few times, only the last time was the broth actually somewhat tasty. But not right yet, and I’ve yet to learn how to make a small batch for testing purposes.

If your wife wants to freepmail me her recipe for the broth, this male caucasian would be ecstatic.

My daughter has been trying to get my wife to write down her pho recipe for the last 20+ years. I do know she simmers the broth with the beef bones and some spices overnight in a big 8 or 10 quart pot. The rice noodles come from the local Asian store. The sliced shallots and other greens go in just before it is served.

I've good access to Viet and other Asian markets & have tried the available mixes and seasoning kits; results less than great so I still frequent Pho restaurants, including the one only two blocks away.

(My kimchee comes out too weak as well...maybe it's generic to an English ancestry.)
