Why are they being counted as Hillary delegates if they in now way have pledge allegiance to her at the convention?

They are asked. They play it safe. Saying they support Hillary in January in no way obligates them to support Hillary at the convention. That doesn’t mean it won’t get very interesting. A close split of elected delegates would likely hand it to Hill.

I've read elsewhere that New Hampshire has 8 Democrat superdelegates. At this time, 2 are uncommitted, but 6 have pledged to Hillary. I'm guessing that is not like a binding contract, but more like an endorsement that you can later go back on.
