Researchers from the Tulane Prevention Research Center found that 60 percent of New Orleans students surveyed utilized salad bars in 12 public schools. But white and other minority students were twice as likely to use salad bars as African-American students.

Could you tell me what variety of pepper that is in the second photo? It looks like some sort of poblano, maybe, but if it will actually turn that color naturally, then I want to grow some. We grow rainbow peppers that stay purple for some time before turning red, but I’d certainly like to grow some blue peppers.

Thanks, but I was referring to the bright blue pointed peppers in the second photo, not to the purple bell peppers in the third photo.
The very fact that we are tracking the color of someone’s skin & what they eat at a salad bar is absolutely insane & the whole problem with our culture today. If we had had PEOPLE go eat salad, without notating their race, then we would all be better off.

At our current elementary, white students bring lunch from home more often than black students. Muslim students are more likely to eat salad than whites and blacks. White and black eat fruit more often than the Muslim children. All students like bananas if they are ripe. Black boys are more likely to eat the mystery foods served, and they eat their vegetables more often than others. The only students I have seen eat the turnip greens are black boys. The broccoli is unsalted and mushy—it is rare that I see anyone eat it. My own children love broccoli, but they won’t eat school broccoli. Our school serves some edible food. As in, I will eat it. However, the lunch ladies are at the mercy of central office personnel who order the foods. Sometimes they order nasty entrees. All breakfasts and lunches are free to all students in the school system. The breakfasts are not good for the health of anyone who eats the microwaved garbage daily.
Those are shaped more like the blue ones, but they’re brown in the photo and description at the link. I appreciate your time posting those links, and hope the kids are having a lot of fun.
Whenever I go to the local buffets and someone asks why I load up on meat and not also have a salad, I use Ted Nugent's retort: "Salad is what food eats". :-)
Many African-American students lack the social skills in how to use a salad bar, after all, salad is not finger food..........

I work in bad neighborhoods and have noticed blacks eat a lot of orange colored food. Cheetos....dorritos...chicken wings. Sometimes the whole meal us orange.

This needs a /sarc tag, because its BS. My Mom and those of everybody I went to school with in the '40s and '50s saw thar we had good balanced meals with lots of fresh fruits and vegetables in season, and canned or (later on) frozen. Our school cafeterias included plenty of plant type foods as well as proteins.
During World War 2 our classrooms had check sheets for us each to fill out showing what our diets were and illustrating what they should be. Messing up on this seriously got a note sent home to our Moms. The interest was that the nation's children should be diet-healthy as well as having all our shots.
We were required to have the smallpox, diphtheria, and tetanus inoculations given right in the schools. There was more supervision then in the public schools over food and health than indicated so far in thi thread. I don't know what it is, nowadays.

Throw in some bags of pork rinds, and also throw some hot meat (cooked until it's falling off the bones) -- otherwise, STFU and stop "studying" things.
Young people don’t eat salad because it’s ‘good’ for them... they eat it because it tastes good to them.
Blacks and Whites and other groups don’t have the same taste buds... they experience food differently.
