for many folks: beans—I don't want an argument, that's just the way some people are...
Spices (and some various to try):
Chili powder
Cumin
cilantro
Black pepper
White pepper
Tumeric
Curry powder of different kinds
lemon/lime
Paprika
Cloves
You can add to the list. I like to vary mine, but always like it hot and spicy.

I oncit had a good recipe for chili but lost it. Made in slow cooker as I recall....forget...I guess it used tomato sauce of some kind....I like ground beef in it.
And beans. Yes I like beans in my chili.
