Real question: is beef tallow available for making fries at home, & is lard a workable substitute?
Still got my grandmother’s frie cutter; Grandma made the best fries in the world & served them with fried squirrel or rabbit which Grandpa had shot for us.
Yes. Done it. Crisco (if it is still sold - no idea) also works.
Although you didn’t write to me, I’d say experiment. Try frying them in that Hormel stuff (pork kidney fat) and if that doesn’t work, talk to your butcher about getting some fresh lard. Beef tallow is just fat, right? Freeze enough and then fry some potatoes in it. Duck fat is also delicious.

Fries are best when fried twice.
Cut your potatoes, soak in salt water for at least an hour, overnight if possible. Dry them on towels. Fry your cut potatoes once until they are just tender but not browned, then let them cool. You can freeze them at that point, and then you can fry them up the rest of the way any time.
If they need more salt be sure to sprinkle it on immediately after lifting them out of the oil/fat or the salt won’t stick.
