Actually, what if someone went to a Kosher caterer and ordered ham etc.? If forced to do that it would be a tremendous burden on them and could negatively affect their business (e.g. people ordering Kosher food might wonder about the cookware used and whether it was used for non-Kosher food - etc.). The same would apply for a Halal caterer. They should have the right to refuse.
