How Britain's taste for year-round asparagus is threatened by climate change

It has become a mainstay on supermarket shelves across the UK: fresh green asparagus, flown in to satisfy culinary desires well beyond the brief domestic growing season.

But Britain's love of year-round asparagus could now be at risk - due to climate change.

Of the 14,000 tonnes of asparagus imported to the UK last year, the majority - some 8,000 tonnes - came from Peru, the world's biggest exporter of the crop.

Experts warn that Peruvian production of the vegetable, which has soared in the past decade, is likely to be hit by extreme weather that scientists say will become more common due to global warming.

Germans eat white asparagus. They grow it with dirt piled up around it so that it doesn’t turn green.

The Ica Valley is a desert area in the Andes and one of the driest places on earth. That they grow anything at all there is because of groundwater irrigation. “Climate change” or whatever they want to call it has no effect on the asparagus there.

One of my favorite stories:

Babe Ruth was invited to the FDR White House for a formal dinner. He was seated next to Mrs. Roosevelt as the guest of honor with the president naturally at the head of the table. The first course was cooked asparagus with melted butter. Everybody tucked in except Ruth who only sat there and looked at his plate. Mrs. Roosevelt, noticing that Ruth was not partaking, turned to him and said, “Why Mr. Ruth, don’t you care for asparagus”? To which the Babe replied, “Nah, it makes my urine stink.”

Ronald Reagan was with Queen Elizabeth at Windsor Castle one morning, and since they shared a love for horses, they decided to go riding together. Some distance from the castle, as Reagan was following the Queen up a small grade, the Queen's horse decided to loudly expel gas in sync with each step.

Embarrassed, the Queen turned around and said, "Oh, I am so sorry, Mr. President."

White asparagus in continental northwestern Europe

Asparagus is very popular in the Netherlands, Spain, France, Poland, Belgium, Germany, Austria, Italy and Switzerland, and is almost exclusively white; if not, it is specified by the local language term for "green asparagus". White asparagus is the result of applying a blanching technique while the asparagus shoots are growing. Compared to green asparagus, the locally cultivated so-called "white gold" or "edible ivory" asparagus, also referred to as "the royal vegetable",[13] is less bitter and much more tender.[citation needed] Freshness is very important, and the lower ends of white asparagus must be peeled before cooking or raw consumption.

To cultivate white asparagus, the shoots are covered with soil as they grow, i.e. earthed up; without exposure to sunlight no photosynthesis starts, so the shoots remain white in colour.

Only seasonally on the menu, asparagus dishes are advertised outside many restaurants, usually from late April to June. For the French style, asparagus is often boiled or steamed and served with hollandaise sauce, melted butter or olive oil, Parmesan cheese or mayonnaise.[23] Tall, narrow asparagus cooking pots allow the shoots to be steamed gently, their tips staying out of the water.

During the German Spargelsaison or Spargelzeit ("asparagus season" or "asparagus time"), the asparagus season that traditionally finishes on 24 June, roadside stands and open-air markets sell about half of the country's white asparagus consumption.[24]
