“A virus does not “grow up”. It just multiplies, so by day 2 there is a higher probability of infecting others and being sick yourself.”

I didn’t realize that. I figured the virus needed to grow to the stage to be transferable, not that it is there immediately.

What does incubation period mean then?

The time from exposure to when the virus has multiplied enough for a person to become sick.

The “time to sick” can be more or less depending on how a person’s immune system fights off the virus multiplication.

I am not a doctor. This is based on what I have read.
