I really read that as sort of a backhanded compliment to the Irish.
Reading it as— if you don’t hire them, they are smart enough to end up hiring you???

No, Jews in NYC always felt put upon by the Irish - in the old days, I mean. One only has to read Betty Smith to realize this. Every ethnic group in NYC over the long years of immigration and assimilation beat up on each other. Unfortunately, the only people who do not grow out of this seem to be African-Americans.
