I have found the microwave to be better than the stovetop for melting chocolate. Never more than 15 seconds per heating, thorough stirring after each heating. With care you can keep it all below 105°F, the critical temperature.

In this recipe you nuke the whipping cream just to boiling, pour over the choc. chips, and whisk until melted and shiny. This is the top layer.
