It turned out that the temperature reading on my oven was off. At the recommended 325 degrees, the internal temperature of the turkey never got hot enough to do the job. When I turned the heat up to 390, I got the internal temperature up to 175, which was fine. This was trial and error. The turkey turned out well, and the leftovers are quite good.
