my friend’s grandmother always called us “stunat”

LOL-- that's Sicilian dialect for "stonato" -- which means nuts, off one's rocker, crazy, wackadoo, etc. The literal translation is "out of tune." I love the Italians -- everything is in relation to taste or beauty, or lack of it!

“Simmons said universities could also develop multicultural programs that do a better job of representing the entirety of students’ home cultures, rather than simply holding a stereotypical celebration for major holidays.”

How about this:recognize that in life you need to adapt to the dominant culture. When in Rome do as the Romans do. It is counterproductive to make the dominant culture feel like outsiders to suit the many minorities. If we keep emphasizing the divisions between people we will find we have as many culture to recognize as we have students.
