“Written off” in this case means the insurance company writes the airline a check and takes ownership of the wreckage. The insurance company will sell it to a salvage company who can recover parts for resale. Pretty much like when you total an automobile.

Except parts have serial numbers and no reputable parts dealer or aircraft operator or OEM will ever use those parts again.
