nearly every professor, both undergrad and graduate school had strict attendance policies and took roll

The attitude I saw at Kent State, University of Alaska and The Ohio State University was: "You are considered adults. You paid the tuition. It is up to you to learn."

I had a spattering of professors in undergrad that had that attitude, but most were very strict - miss “x” number of classes, I drop you from the class with an “F”.

My graduate work (Seminary), You miss more than two classes, you failed the class (without some kind of MASSIVELY important and verifiable issue/emergency). Of course, when a class meets once per week - missing more than a couple of classes was a LOT.
