Aloha Doc and My!
Got a bunch of books by Cooks including Julia Child, Alma Lach on the French side, Paul Prudhomme on the Cajun side, and a few Mexican and Tex Mex, one which is difficult and meals tend to be expensive and one that's practically falling apart from age and use. One can make Tex Mex for pennies that are better than anything you'll get at a Taco Bell.
I mostly use only one Cook's books for Italian though; That's Biba Caggiano. Try to top anything she does.....without starting a vendetta.

I am glad you mentioned Biba Caggiano, tonight.
I am going to try and find a cookbook by her one of these days.
