Excessive calorie consuption leads to obesity, which is linked to type II diabetes. The body converts excessive calorie intake, whether they be from carbohydrate, lipids, or protein, into fat. But you're right that excessive carbohydrate consumption combined with a sedentary lifestyle is a main contributer to obesity for most people. I thought you meant people need to eliminate simple carbohydrate, which is what some of those fad diets recommend.
I don’t cut out all carbs. However, cutting out wheat has had a couple of ancillary benefits as well: my usual spring allergies are quite subdued this year (hardly any sneezing), and my hips don’t usually ache anymore when I jog on the treadmill at the gym.
The reason wheat is so obnoxious is because of it’s high glycemic index, meaning that consuming it causes your blood sugar to skyrocket. That promotes secretion of insulin to get rid of that extra sugar by storing it as fat. I suspect my allergy improvement and better jogging performance is due to the removal of the wheat gluten from my diet.
Believe me, I’m not simply promoting this stuff. I’m actually carrying it out on myself, and it seems to be working.
