Not only is the conversation recorded, but after the incident Zimmerman went out to the apartment complex with the police and went over the whole incident, step-by-step, and that was all recorded.
How do you think Zimmerman received a broken nose and a bloody wound on the back of his head? That he did that himself? A witness described how that head wound occurred, as Trayvon was seen beating the crap out of Zimmerman before a shot was heard.
