Probably not as much as you'd think, actually. There are three other theme parks in the WDW complex, and they had them open for extended hours to compensate. Add in that this is a traditionally slow time of year, and I don't think they had to turn anyone away for capacity reasons.

On the other hand, if I had planned out my trip 6 months ahead of time (which is kind of necessary if you have specific desires for the restaurants), and this threw my whole schedule off by screwing up one of my "Magic Kingdom days", I'd be pretty ticked.
