I didn’t know that about honey. I’ve had honey in a cabinet for about a year, and I threw it out. I figured it had to be bad by then. Now I know different...thanks.

Also, honey will, over time and if it gets cold, crystalize. Just immerse the jar in warmed water, it will reliquify, and all is good.

!!!!!!!!!!! That is sacrilege!!

Honey is the most awesome thing ever. Honey is nature's best kept secret and all around life saver. Not only does it keep forever (and I do mean forever...some honey was found in Egypt that had been buried for centuries; it had crystallized, they heated it up and voila! Honey!), it is an excellent sugar substitute, a great antibiotic, AND it functions better than anything for wound healing.

I have so much honey I'll probably never run out. I will always buy local and always use it for everything.

p.s. Honey and lemon tea is great during the winter months for boosting immunity. Add a little apple cider vinegar and you will live to be 150, I promise!! ;)

Why Honey stays naturally preserved

When the bees make honey they start with nectar with a high moisture content. They then place it in cell and fan it with wings until the moisture content drops. the "honey" is then hydrophilic, meaning it will draw moisture from anything that comes into contact with it., including any living cell, bacteria, mold, etc. In other words, any organism that might rot the honey is immediately killed by dehydration.

That's why it never goes bad, Truly one of natures most astound materials from an astounding animal.
