I noticed that the accusers of this guy were first, PETA, which accused him of animal cruelty, but then again, they want to outlaw all Kosher meat processing, then eventually all meat processing and consumption.
The second group to attack him was based on inspection results by the USDA demanded by the United Food and Commercial Workers Union, which has been attempting to unionize the workers at his business, unsuccessfully.
Third, he was attacked by the EPA as part of a big push against pollution from animal processing plants around the country. And this is part of the current EPA regulatory rampage which is hurting business all over the US.
Fourth, the hiring of illegal aliens is typical in the meat processing business. An entire county in Arkansas is majority Mexican, because they have been imported to work for Tyson Foods, which is politically protected.
Fifth, again with the labor union, he was acquitted of hiring underage workers.
Put it all together, I suspect his big mistake was in not bribing enough congressmen to give him political cover. Possibly as well, he has made some enemies in the federal bureaucracy that wanted to shut him down.
