I make a killer turkey meatloaf, with green peppers, onions
well give the recipe!
1 pound lean ground turkey (dark and white meat)
1+1/2 cups of stove top stuffing, turkey flavored, crumbled to almost a powder
1 whole green pepper, diced (I've used pablono once, never again)
1 large sweet onion
1 teaspoon garlic powder
1 tablespoon of Dale's steak sauce
1/3 cup of fresh chopped celery with the tops (when in season, you can substitute dandelion greens for a special flavor)
1 can green peppers and stewed tomatoes, drained well, half in mix, half on top for baking, add one generous tablespoon of Hunt's ketchup to the part spread on top for baking
Mix the ingredients in a large mixing bowl, by hand (I keep disposable latex gloves for kitchen use), and add 1/2 cup of egg substitute as the mix comes together
Bake in a bread loaf pan and allow to cool in the pan for ten to fifteen minutes before cutting in slabs 1 inch or more thick. Makes wonderful meatloaf 'sandwiches': in a flour tortilla, add chopped mint leaf, fresh spinach leaves sliced in ribbons, feta and Monterey Jack cheese, all rolled up and a toothpick to hold the roll while baking, heated in a 350 degree oven for ten minutes.
