Who knows if Mt. Everest was even there at the time, or if so, how high it was?

Lots of geographical changes occurred after the flood.

Whatever was there at the time was covered.

Greco-Roman and Chinese accounts of the flood speak of handfuls of animals and people surviving here and there on mountain tops and anything which could float for the better part of a year but I'd assume that most of today's animals owe their existence to Noah.
