There's a
handheld model in aluminum. Same shape which works so much better than the giant fork kind.
The long one is polished stainless steel which is why it's so much I guess.

Its a eastern soviet bloc nut roll made by the Byzantine Orthodox Christians at Christmas.
Variations include Apricot, poppyseed, cottage cheese with pineapple, Strawberry though that is rare.
Usually it is walnuts.
I make them with pecan here in Tx
