I was thinking about over 3 days for the Brats deal. But a tournament consumes a lot of folks too.

Sure, but it's mainly over one day. The setting up, etc. can be done by committee. Beyond that, it's people on site during the day. Not like the Brat Booth which requires 5-6 people in 4 hour shifts, morning through evening, for 3 days. That's intensive.

I'm going to talk to our current prez, who's a member of our CC, to see what he thinks...
