You're probably thinking of Pia Zadora, not Kathy Ireland. Checking IMDB, "Santa Claus" was 1964. Kathy Ireland YOB 1963.

Yup, it was Pia Zadora (back in obscurity again these days). I have "Santa Claus Conquers the Martians" on VHS. I watch it every other year. (It's just too awful to watch every year.)
