But Luster didn't sign a bail bond contract, he paid the bail out of his own pocket. Because you know, he's rich. So he didn't waive his constitutional rights, and even if he did, such contract wouldn't be valid in Mexico.

Besides, according to Reese v. United States, U.S. bounty hunter's "power of arrest can only be exercised within the territory of the United States."

But why should we care about the laws of a country that urges it's citizens (many of whom are criminals) to break OUR laws?

That doesn't make any sense. Dog, although interested in justice, is in BUSINESS. So there must be more to the story.
