For an adult, it would be sorta like learning a new language, never fully fluent, and always with an accent...

If it were suddenly thrust upon an adult, I imagine it would be like a man blide his entire life suddenly being able to see. In such cases, it takes months or years for the person to adjust. They still use touch and hearing to put what they see in a context they understand.

Something like that. I don't know how a kestrel perceives UV, but I think an adult human might see it with an accent, a bluer shade of blue, rather than as a distinct color in its own right.
