Considering we have no idea how long a "day" is in God's time, I can easily reconcile the earth's creation in 6 days to a scietific view of it taking billions of years by men's reckoning.

Yup. Also, the very term "day" is frequently used, even in modern English, in very vague ways. For example: "Back in the day of the victrola, audio recording was poor at best.", or, "The day of reckoning had arrived for this corrupt politician."

"Day" is frequently used to mean nothing more specific than "a period of time". Used in that way, the exact length of time is not given and is usually irrelevant. How long the creation took is far less important than the fact that it did occur, and that it was performed by Almighty God.

You just ruined my day!

I prayed to God that he would make me a wealthy man and he said, "In a couple of days your request will be granted."

Another way to consider it is that God can create the universe as easily as a painter paints a picture. With the stroke of His finger He can stretch light across a Universe. Just as Adam was mature and ready for marrige on the day of his creation, the Universe was mature and ready to be occupied.

Isa 40:22 [It is] he that sitteth upon the circle of the earth, and the inhabitants thereof [are] as grasshoppers; that stretcheth out the heavens as a curtain, and spreadeth them out as a tent to dwell in:

Gen 5:1 This [is] the book of the generations of Adam. In the day that God created man, in the likeness of God made he him;

Deu 4:32 For ask now of the days that are past, which were before thee, since the day that God created man upon the earth,

Gen 5:2 Male and female created he them; and blessed them, and called their name Adam, in the day when they were created.

Mar 10:6 But from the beginning of the creation God made them male and female. (red letters indicate words spoken by the Christ in Christian)

Gen 3:20 And Adam called his wife's name Eve; because she was the mother of all living.

Acts 17:26 From one man he created all the nations throughout the whole earth. He decided beforehand which should rise and fall, and he determined their boundaries.

Does that mean I've got to work for 6 billion years before I can have a day of rest?

One word of agreement: "relativity".

IMHO, there is no more egregious form of arrogant hubris than that exemplified by those who insist that the clock rate and calendar of the Creator of our vast and infinitely complex universe must be dictated by the (inconstant) spin rate of this insignificant ball of mud.

Then one has to explain to me how the plant life existed for millions of years with out the sun.

The plants were created on the 3rd day and the sun on the 4th.
