I've baked a potato or two from Point A to Point B, but that's about as "kitchen friendly" as I want my vehicle to be, thanks!

I'm predicting that before long, vehicles will have microwave ovens in them.

Naturally, along with that, one would want to have a small refrigerator. Some vehicles already have them.

A handy thing to have would be a system to collect, and purify, rainwater. Most of us live in areas where it rains occasionally. It could also capture the condensate water which drips off your air-conditioner.

It seems rather silly to arrive at a scenic overlook, after dripping water for a hundred miles, and not have anything to drink. I like the secure feeling I would have, too, if I had a vehicular breakdown but knew I had at least a gallon or so of drinking water.
