Red beans and rice? Yum!
Now that you mention it, I have some in my freezer that need to be defrosted, and tomorrow is Monday. Red Beans are the easiest Cajun dish to make. The only thing that doesn't require a roux.

Red Beans are the easiest Cajun dish to make. The only thing that doesn't require a roux. Yes! I trained my yankee, Italian wife to make red beans and rice early on and she's become a master. You're right... Rouxs can be tough. Takes work. I can do it well when I'm not being lazy...:-)
