If I were you I'd substitute those so-called "whole grains" with nuts, preferably walnuts and pecans.

That way you will be eating the fiber along with a minimal amount of starch and at the same time getting the full benefit of a diet filled with antioxidants and flavinoids.

Closest I come to grain is rye.

I tried spelt flour once. But it made me feel just as bad as regular plain old flour.
