I have a dumb question, but whenever there's an unidentified aircraft being tracked do they normally know what type of aircraft it is?

Not if he's unidentified. You could make some assumptions of general type by speed and altitude, but if they aren't in communication, all they get is a radar reflection. If he has been in communication, they'll tag him with his stated type and his number.
