Thanks for this thread Carlo3b! I like this dessert too. It's pretty simple to make too.

*PUMPKIN CHEESECAKE*

2 cups flour
2/3 cup brown sugar
10 Tablespoons of softened butter
16 oz. pkg. cream cheese (softened)
1-1/2 cups sugar
2 cups Pumpkin
3 eggs lightly beaten
1-1/2 cups cream
4 teaspoons cinnamon
3 teaspoons allspice
3 teaspoons vanilla
3/4 cup finely chopped walnuts
extra chopped walnuts for topping too

In a small bowl, combine flour and brown sugar. Cut in the butter to make a crumb mixture. Stir in the walnuts and press mixture into the bottom and up the sides of a springform pan. In a large bowl, combine cream cheese, sugar, pumpkin, eggs, cream, spices and vanilla. Mix until smooth. Pour mixture into crust. Sprinkle with walnuts and bake at 350 degrees for 30-35 minutes or until done. Cool and remove from pan. Serve with Cool Whip or Ice Cream. Then endulge and enjoy! :)
