You're right. I didn't really think you were a PETA member.

I don't usually like liver, but elk liver is delicious, if prepared properly. They don't have a gall bladder (at least that's what I was told), therefore, the liver does not have that "biley" flavor.....especially good with bacon and onions.

BTW... I often see bighorn sheep around here. Don't hunt them, though.

LOL, I knew you were joking...so was I. (Is Mercury retrograde today? Nobody seems to get that I'm joking today).

I don't like liver either, but I always have a slab when one of our party bags a bull. I think you are right, elk liver is pretty mild compared to other liver.
